Today I want to share a very good recipe with you.
I am very new at taking photos of food; esp. while I still have to cook
and then serve it when still hot.
This is a recipe my brother (he's a chef) invented (as far as i know)
but I changed it here and there.
Fennel isn't a vegetable we use every day.. mainly because..
well..it tastes a bit strange.
We usually drink fennel tea when we're feeling sick,
so we're not actually keen on cooking it.
But once I tried fried fennel, I was convinced.I had to make do today since I didn't have all ingredients
(a nightmare for certain males)
and I will write down the original one.
Fried Fennel with Salmon in a caramelized Onion sauce
Serves 4
Shopping list:
2 big fennels
2 onions
butter for frying
orange juice
Pesto Genovese
Dijon or other mustard
Salt and Pepper
300g salmon

cut the fennel into small stripes
and fry it with butter until its brown.
Then turn the temperature down and let it cook for about 15 minutes
cut the onions into small pieces and fry in butter for about 5 minutes,
then
deglaze it with 150 ml orange juice and let it cook (reduce) for
about 5 minutes
deglaze it with a good bit of cream (I guess about 50ml) and
ca.150ml milk and 150 ml water.
(I don't use a measuring cup) just all in all enough for a sauce
1 or 2 tablespoons of Pesto (as you like it)
1 tablespoon (or more) of Dijon (I put also some sweet mustard into it)
Salt and Pepper
Now you can put the fennel into the sauce and let it cook for a bit
cut the salmon into small pieces and put it into the sauce (just a minute or
two before serving, so it will be JUST cooked
And thats about it. I usually serve it with Pasta (usually Farfalle and in todays case
with pumpkin farfalle)
You can also fry the salmon.
I tried smoked salmon today but didn't like it as much.
